Malpua Recipe
Malpua recipe is an Indian sweet dish that is basically a sugar syrup soaked pancake prepared from a batter of flour, milk and cardamon. These pancakes are usually fried in ghee till crisp along the edges soaked in sugar syrup garnished with pistachios and served warm with a topping of Rabri rich thickened milk. Ingredients:
- Plain flour (1 cup maida)
- Mawa(1/2 cup)
- Saunf powder (1/4 tbsp) optional
- Cardamon powder (1/2 tbsp)
- Salt pinch
- Sugar 1 tbsp
- Milk 2 cups
- Ghee 1/2 cup
- Pistachios
- Almonds 8-10
- Saffron
For sugar syrup:
- Sugar 3/4 cup
- Water 1/3 cup
- Cardamon powder 1/4 tbsp
- Saffron 4 standard

Method:
- Boil the milk till it reduces to 1/2 cups. Turn off flame and allow to cool to Luke warm temperature.
- In a bowl, add khoya and half of the boiled milk and mix it well. Add cardamon powder. Saunf powder, sugar, salt and saffron and mix well. Add half of the flour and mix well till there are no lumps.
- All the remaining flour and mix well add the milk till is form a smooth flowing batter. Keep mixing the mixture for 3-4 minutes and aside.
- To prepare sugar syrup add sugar and water in a vessel and allow the sugar to melt. Add cardamon powder and turn off heat. #tastyfoodstyle
- Heat ghee in a pan on low medium flame for 3-4 minutes pour a small laddel full of batter in the center of the pan. The batter will spread on its own. Do not try to touch till it starts turn golden on medium flame till it turns into golden brown.
- When the pancake is done use a slotted spoon to drain the malpua and place it in the sugar syrup immediately. Let it sit for half a minute in sugar syrup. Remove with a slotted spoon to drain the syrup and place on the one plate.
- At the time of serving, place malpua on a serving plate. Spoon some rabri on top of the malpua and garnish with chopped pistachios and almond slivers.#tastyfoodstyle
